Ghoulish Ghost Cookies (PKU)
Method
- Preheat oven to 200’C / Gas mark 6
- Rub the butter, sugar and flour together until they form breadcrumbs, then slowly add the water bit my bit and knead into a dough. You may not need to use all the water.
- Dust a surface with flour and roll the dough to around 1cm thickness
- Use a circular cookie cutter to cut out your biscuit shapes. Roll out any leftover dough and cut out extra cookies until you have no dough remaining.
- Place the cookies on a lined baking tray and bake for 20 minutes, or until golden. Leave to cool completely before decorating.
- While cooling, sift the icing sugar into a bowl to remove any lumps, then slowly add water a teaspoon at a time to give a thick but pourable icing.
- One by one, dip the vegan mallows into the icing and place onto the centre of the cooled cookies to secure them in place.
- Using a spoon, pour the white icing over each vegan mallow until fully covered, allowing it to drizzle down the sides and onto the biscuit.
- Leave to set, then draw on ghost eyes and mouths using black writing icing.
