Low Protein Warm Mediterranean Vegetable Salad (PKU)
- In 1 tbsp. oil, fry the pepper, onion and courgette for 4-5 minutes.
- Add the sliced Violife Cheese to the pan and fry for 4-5 minutes until cooked through.
- Add lettuce to bowl and top with the vegetables and cheese.
- Drizzle over 1-2 tsp. honey.
