Low Protein Veggie Pizza Boat (PKU)
Method
- Turn on the oven and grill to a high heat.
- Slice the courgette down the middle, and then scrape out about half of the courgette’s centre with a spoon.
- Place on a baking tray and spread on the tomato puree. Then add the grated cheese and mushrooms (or your favourite low protein toppings!).
- Place under the grill for 7-10 minutes or until cooked to your liking. Serve with the side salad.
