Low Protein Vegetable Samosas (PKU)
Method
- Heat 1/2 of oil in the pan and add onions
- Cook for 5 minutes or until soft
- Add cumin, coriander and cayenne pepper and cook for a further minute
- Set aside to cool
- In a bowl add carrot, sweet potato, coriander and onions and mix well
- Place the flour into a bowl and mould the mixture into triangles
- Coat all sides with the flour
- Heat the remaining oil and place samosas into the pan
- Cook for several minutes until golden brown
- Serve with sweet chilli sauce!
