Low Protein Lettuce Boats (PKU)
- Chop the tomatoes and cucumber.
- Mix 2/3 of the tomatoes with the cucumber, and combine with the juice of half a lemon, salt, pepper and 1 tsp. oil. Set to one side.
- Mash the avocado, and mix with 1/3 of the tomatoes, the remaining lemon juice and then season with salt & pepper. Set to one side.
- Pull off 4-5 leaves from your lettuce and place on a platter. Add the mixtures to the lettuce cups and serve with a wedge of lemon.
